We source it through Cofinet, who've worked directly with these growers since 2019, training them on natural processing, everything from fermentation times to drying techniques, so the fruit character comes through clean rather than funky or overripe.\u003c\/p\u003e\n\u003cp\u003eNo harsh chemical solvents in the decaf process, just sugar cane Ethyl Acetate and spring water. The beans are steamed to loosen the skin, soaked until saturated, then left in contact with the sugar cane EA for eight hours to pull the caffeine out. Dried back down afterwards to get the moisture back where it started. Says a lot about how far decaf's come that a process this careful now exists just to take the caffeine out.\u003c\/p\u003e\n\u003cp\u003eWe wanted a decaf that would work as well through a pour over as it does as espresso, and this one shone on the cupping table.
