Jorge is a forestry engineer, so a big chunk of the farm is pine plantation and conserved native forest, with the coffee growing alongside it under plantain trees and other native shade species.\u003cbr\u003e\u003cbr\u003eEl Jaragual grows seven varieties, from Castillo to Gesha. This lot is Rosado, processed washed with a thermal shock. The cherries are floated, left to oxidise for 24 hours, pulped dry, then oxidised for another 24 hours before being washed at 45°C. They're then fermented for 36 hours below 25°C with a specific yeast, washed at 5°C to stop the fermentation, and dried for 76 hours at around 40°C. Every step is controlled, and you can taste the difference.\u003cbr\u003e\u003cbr\u003eWe roast it light-medium to keep the sweetness and fruit up front.
