Mutambu Hill - Burundi
Mutambu Hill Lot 31A - Burundi
Yellow plum, honey sweetness and a bright green apple acidity.
This lot comes from 384 smallholder farmers in the Mutambu Commune of Bujumbura Province, Burundi, including lead farmers Erneste Habonimana, Fidele Sinzotuma, Damien Baransamaje, Philippe Ntagahoraho and Leonard Ndimugipfunsi. After harvest, the cherries were sold to Migoti Coffee, who processed the lot at their washing station in Migoti Hill.
Migoti Coffee was founded in 2015 by engineers Pontien Ntunzwenimana and Dan Brose. They set out to connect Burundian smallholders to international buyers through quality processing and transparent supply chains. At the washing station, cherries are sorted, fermented for a day, then pulped and washed. The coffee is pre-dried in the shade for five days before moving to raised beds in the sun for two to three weeks.
We roast it to bring out that plum sweetness and bright acidity. Light bodied, bright and sweet, with a honeyed finish.
Brewing
Best suited to filter. A V60, cafetiere or batch brew will let the washed process shine.
